Soft & Spongy Khaman Dhokla

Traditional Gujarati dhokla with fluffy texture and delicious tangy flavor.

Ingredients

For Dhokla Batter

  • 1 cup Kalash Khaman Dhokla Mix
  • Water as required
  • 1 tbsp oil
  • 1 tsp lemon juice

For Tempering

  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 2 green chilies (slit)
  • Curry leaves
  • 1 tsp sugar
  • ½ cup water

Garnishing

  • Fresh coriander
  • Grated coconut
  • Sev (optional)

Instructions

Step 1 – Prepare Batter

Take Kalash Khaman Dhokla Mix in a bowl.
Add water gradually and whisk to make a smooth batter.
Add oil and lemon juice.


Step 2 – Steam Dhokla

Grease a steaming tray.
Pour batter into tray and steam for 15–20 minutes until cooked.


Step 3 – Prepare Tempering

Heat oil in a pan.
Add mustard seeds, green chilies and curry leaves.
Add water and sugar, then boil for 1 minute.


Step 4 – Add Tempering

Pour hot tempering evenly over steamed dhokla pieces.


Step 5 – Garnish & Serve

Top with fresh coriander and grated coconut.
Serve with green chutney.


Serving Suggestion

Serve warm with mint chutney and masala chai.


Recipe Tips

  • Batter should not be too thick.
  • Steam on medium heat for soft texture.
  • Add tempering immediately after steaming.
  • Do not overcook the dhokla.
